Trail mix cookies
(Oatmeal pistachio, dark chocolate and cranberry cookies)

Trail mix is one of my favorite things, so why not make it into a cookie?!? Today I answered my own prayers (woo hoooo)! I took the traditional oatmeal cookie and jazzed it up with pistachios, dried cranberries and dark chocolate. These amazing cookies are perfect for any time of year too (Red and green colors make for a perfect holiday cookie)
While I was preparing these little babies and couldn’t stop sneaking bites!  If the batter is good the cookies are going to be even greater .IMG_0354

I wanted the texture of my cookie to be a bit smoother instead of chuncky, so I threw the pistachios and dark chocolate chips into a food chopper. Chop for about a minute,   Until you reach your desired size pieces. This step is optional.IMG_0347

These Trail mix cookies are a perfect combination of sweet and salty. You will have no problem taking them into the wild and devouring them all.


What you’ll need to bake up these treats


1 1/2 cup all purpose flour
1 cup of brown sugar (packed tightly)
1/2 cup granulated sugar
2 sticks of butter (softened)
2 eggs
3 cups old fashion oats
1 teaspoon Baking soda
1 teaspoon
1/2 teaspoon Salt
1/2 cup Dried cranberries
1/2 cup pistachios (chopped optional)
1/2 cup dark chocolate (chopped optional)

1. Pre-heat oven to 350 degrees
2. In a large mixing bowl mix butter and sugars, add eggs and vanilla to the mixture. Mix until smooth
3. In a separate mixing bowl, mix flour, baking soda and salt
4. Add flour mixture to sugar and eggs mixture, combine until smooth
5. Fold in oats, cranberries, pistachios and dark chocolate
6. Drop rounded tablespoon full on to ungreased cookie sheets
7. Bake 10-12 minutes or until golden brown
8. Let cookies cool on sheet 1-2 minutes remove and add to cooling rack
9. Enjoy!
